Easy St. Patrick’s Day Cookie Pops

As you may have figured out, I’m not much of a cook. That’s why there are very little recipes on this site! Last year, St. Patrick’s Day fell on a Monday, so many people including myself, celebrated it on the Saturday before.  We had left over cookies from the party, and I had a playdate on Monday, St. Patrick’s Day, so I whipped up these easy St. Patrick’s Day Cookie Pops for our playdate.

Here’s what I used:

  • Cookies from the market bakery
  • Lollipop sticks
  • Cookie icing
  • Treat Bags
  • Ribbon

I had three different kinds of cookies left over.

I turned each one over and put on some cookie icing. You can also use cake icing, but I thought I’d but the bottle because it was less messy and there was no need to spread it out.

Next, I simply added a lollipop stick and sandwiched two cookies together. If you use cookie icing like I did, you have to let the icing set and harden which takes about an hour. I recommend using small cookies that aren’t too heavy for the lollipop stick.

Lastly, I put them in little treat bags and tied a cute little green argyle ribbon.

They were a hit at the play date! It only took a few minutes to put them together. These are great for semi-homemade party favors for baby showers, wedding showers, or birthday and holiday parties. The local bakery always has fun themed holiday cookies that you can use.
